Simple Bacon, Tomato and Spinach Pasta
This is one of my favourite simple summer recipes to make, it takes no time at all and most of it can be prepared the night before. You could even cook the bacon the night before to make it even quicker. The recipe is light but filling and has a very summer feel. This is the kind of recipe which you can tailor to you and your tastes and add as many or as few ingredients as you want !
The key to this recipe is good quality ingredients because it is a very simple flavour palate which lets the ingredients shine. If you can’t afford to buy organic vegetables or lardons from the butcher invest in some good quality pasta – it will make a huge difference – trust me !!
I recently purchased this healthy oil spray from Pampered Chef and I am loving it! It gives the right amount of oil out which means you don’t use too much.
I put my frying pan over a medium heat with a little bit of oil. You want to cook the bacon for about 8-10 minutes or until it is golden, crispy and delicious! While your bacon is cooking, boil your kettle and put the boiling water into a pan and bring back to the boil.
Once your water is boiling add your 2 cups of pasta to your pan and cook for 7-8 mins, depending on your pasta instructions. Next drain your pasta and put it in a bowl or back in the pan, mix in the baby spinach and tomatoes – they go together really well. Take you bacon off the heat and drain the oil onto some kitchen roll (optional).Then add your bacon and give it another good mix, place on a decorative plate a drizzle with balsamic vinegar. I use the Jamie Oliver Balsamic vinegar as it has the perfect amount of acidity balanced by a sweet smooth taste.
This is a hit with all my family and it really has something for everyone. If you are feeding kids and they don’t like spinach and tomatoes leave them out. Simple pasta and bacon on together own is delicious too!
