Quick And Simple Noodle Soup Recipe

  • 1 red onion thinly sliced
  • 1 garlic clove finely diced
  • 1 thinly sliced red pepper
  • 2 thinly sliced carrots
  • Half a courgette diced into small cubes
  • A handful of green beans diced up
  • A good chunk of red cabbage finely sliced
  • 2 finely sliced spring onions (for Garnish)
  • 1 cup of vegetable stock
  • 2 cups of water
  • Soy sauce
  • Chinese five spice
  • Honey
  • Rice wine vinegar
  • Noodle of your choice ( I have vermicelli noodles)

First you want to fry of your onions until they are soft and golden on a low/medium heat. Then add in your garlic, being careful the garlic doesn’t burn as it will taint the dish. After about a minute of frying off the garlic add in all the vegetables bar the red cabbage and spring onions. If you add the red cabbage now it will lose all of its colour and be very soft (I made that mistake). Fry for 5/6 minutes until the vegetables are soften slightly.

After that add in a good dash of soy sauce along with a ½ teaspoon of Chinese five spice and mix well. Then add your 1 cup of vegetable stock and 2 cups of water followed by a tablespoon of honey and a teaspoon of rice wine vinegar. Simmer for 2/3 minutes.

Then add in your noodles and cook accordingly. My noodles take only 2/3 minutes so I was able to cook them in the pan with the sauce. While adding the noodles to the pan also add the red cabbage and mix well. Bring to the boil making sure the vegetables and noodles are cooked. Take of the heat and serve up, add spring onions to garnish then ENJOY!!

    I am going to have to try this recipe! It looks so good and perfect for reinventing leftovers like you stated with throwing chicken in it.
