Our Friday Night Fakeaway
For our family, dinner time is a time where we sit down, talk and reconnect. Every night we all sit down together and tuck in to a home cooked meal. On a Friday I like to cook something a bit special. Last Friday I decide to create one of our family’s favourite Chinese takeaways, but healthy using fresh and local ingredients.
I thought it was going to be so difficult to make everything but it wasn’t at all!! Peking Duck was up first, so I went straight to a Jamie Oliver recipe because I have never been disappointed. I did alter the recipe a little by adding some fresh orange juice. I will say this was the most amazing recipe as it was so simple and worked perfectly. The duck was a hit with all the family; it tastes so delicious and it is even better than the duck you get from the takeaway because it is fresh and homemade. We simply took the meat off the bone and shredded it up using two forks and then you have the best shredded duck for pancakes!!
I also made my spicy stir fry as a side which complemented the duck perfectly. We had some simple rice for the duck pancakes and for the pancakes we used small deli wraps as we couldn’t find the authentic wraps anywhere in the supermarket.
We also bought a hoi sin sauce for the pancakes. It is best to try a find a good quality one as it will have more depth of flavour as the cheaper ones always taste too sweet. Next time we are going to try making Jamie Oliver’s plum sauce recipe for a change to hoi sin but I forgot to buy the ingredients when we made the meal… I am way too forgetful!
